Primeur, Vintage and Origin all come from the Baerii (Siberian) sturgeon. The difference is time. Primeur is matured the least and tastes fresh and creamy. Vintage is matured longer for more depth. Origin is matured the longest and delivers the strongest, most traditional caviar flavor.
Sturia Oscietra comes from the Gueldenstaedtii sturgeon. Its firm, golden-brown pearls taste of butter, nuts and a hint of avocado, making it a favorite for anyone who finds traditional caviar too strong.
Keep the tin refrigerated between 32 and 39 degrees Fahrenheit and open it just before serving. Serve it simply on blinis, soft scrambled eggs, warm baby potatoes or crisp toast with creme fraiche, and use a mother-of-pearl or plastic spoon rather than metal, which can change the flavor. Once opened, enjoy the caviar within two to three days.
